Vegan Apple & Cinnamon Cake Recipe
Ingredients:
| 3 tbsp ground flaxseeds | |
| 230g sugar | |
| 1/3 cup almond milk | |
| 1/2 cup wholemeal flour | |
| 1 1/5 cup plain flour | |
| 1 1/2 tsp cinnamon | |
| 2 tsp baking soda | |
| 300g diced apples | |
| 3/4 cup olive oil | |
| 1 tsp vanilla essence | |
| 1/2 tsp salt |
Steps:
- Peel and dice 2 medium-sized apples (300g diced apples).
- Make 3 flaxseed eggs by combining 6 tablespoons of water and 3 tablespooons of ground flaxseed. Leave to set.
- Combine sugar, oil and vanilla in a large bowl and stir.
- In a separate bowl, mix together flour, baking soda, salt and cinnamon.
- When flaxseed eggs are set, combine them with your oil mixture. Add half a cup of almond milk. Mix well.
- Pour oil mixture into the flour mixture. Stir until just combined.
- Fold in apple pieces and pour mixture into breadpan. Smooth the top of your mixture.
- Select programme ?? and turn on the breadmaker. Bake for 1 hour 50 minutes.
